My Mother’s Kitchen: Apple Bars Recipe

I thought it is time to post another of mom’s delicious recipes, and came across this one for Apple Bars. A close cousin of a popular dessert that calls for apples and rolled oats–an always tasty combination, these squares have the added advantage of being perfect for lunchbox snacks or brown-bag treats.

This recipe is also a great way to use up those apples in your kitchen that have become a bit soft; turn them into Apple Bars for your loved ones to enjoy and accept the compliments that are bound to follow.


Apple Bars

Oat mixture:
1 ¾ cups rolled oats
1 ½ cups sifted flour
¾ cups butter
¼ tsp baking soda
1 cup brown sugar

2 ½ cups sliced apples (peeled)
2 Tbsp. butter
½ cup sugar
¾ tsp. cinnamon

Lightly grease a 9“ square pan.
Prepare oat mixture: Combine rolled oats, sifted flour, soda and sugar. Cut butter in with pastry blender or two knives unitl mixture is crumbly. Put half of mixture into pan.
Arrange sliced apples over crumb mixture. Dot with butter and sprinkle with sugar mixed with cinnamon. Cover with remaining crumb mixture.
Bake in preheated oven (375 ° F) until apples are soft (approximately 20-30 minutes).

Cut in squares or bars. Yield: 16 bars
