My Mother’s Kitchen: “Rocky Roads” Square Recipe


Did you just find out that friends are popping in for supper tonight? Will carolers be arriving any minute, hoping for mugs of hot chocolate and a holiday nibble to satisfy their sweet tooth after hours of singing in the frosty air?

With Christmas just around the corner, presents to be wrapped and not much time left for Christmas baking, I thought I’d share one of mom’s delicious no-bake square recipes–Rocky Roads. These squares can be whipped up in no time at all, using ingredients most of us keep in our pantries anyway. Try them out and you may find they become one of your favourite recipes to make, no matter how much time you have on your hands.

Rocky Roads

Melt:

6 oz. Chocolate chips
1 square of margarine (1/2 cup)
Add:
1 egg
1 cup confectioner’s sugar

When nearly cold, add 2 cups miniature marshmallows. Stir & pour mixture into 8” square greased pan, lined with graham wafers. Sprinkle with cocoanut. Put in refrigerator to set.
