My Mother’s Kitchen: Oatmeal Cake Recipe


Cold weather will be here soon—don’t forget your oatmeal!

 

Today’s recipe is for Oatmeal Cake—but not just any old oatmeal cake—this oatmeal cake is topped with brown sugar, and butterscotch and chocolate chips. It is easy to prepare and is another great way to convince your family to ‘eat their oatmeal’ this fall and winter. Try it soon and let me know how it turns out.

Oatmeal Cake

1 cup quick-cooking oatmeal (NOT instant oatmeal)
1 ½ cups boiling water
Pour water over oatmeal, stir to wet thoroughly, cool.

Mix together and add to oatmeal mixture:
1 cup white sugar
1 cup brown sugar
2 eggs
¾ cup vegetable oil

Add:
1 ½ cups flour
1 tsp. baking soda
1 ½ tsp. baking powder
1 tsp. salt
2 tsp. vanilla
Mix well and pour into greased 13” x 9” pan.

Topping
½ cup brown sugar
½ cup chocolate chips
¼ cup butterscotch chips
Sprinkle brown sugar on batter first, then add chocolate and butterscotch chips. Note: Can add ¼ cup chopped walnuts if desired.

Bake at 325° F oven for 50 – 60 minutes until done.
