My Mother’s Kitchen: Fairy Gold Cookies Recipe

Today I decided to post another one of my favourite cookie recipes of mom’s—Fairy Gold Cookies. These cookies, with their every-day ingredients of brown sugar, shortening, eggs and flour, are easy to make and yet oh-so-delicious to eat.  They are especially good with strawberry jam or jelly as the filling that holds the lightly browned cookies together.

Fairy Gold Cookies

1 cup shortening
1 cup brown sugar
¼ cup hot water
2 ¾ cups flour
1 egg
1 tsp. baking soda
2 tsp. cream of tarter

Directions
Cream shortening, add sugar and mix well. Beat egg and add to mixture. Chill thoroughly. Take out by spoonful and roll in small balls. Place on greased baking sheet. Press with fork and bake in moderate oven (350°F) until lightly browned.  Put cookies together with jam or jelly in the middle.
