My Mother’s Kitchen: Toll House Cookies Recipe


Today’s recipe entry is short but delicious…Toll House Cookies from mom’s collection. These cookies are melt-in-your-mouth, chocolaty sweet, and are great for dipping into a cup of coffee or tea.

Children and adults alike love these cookies, and they are perfect for any occasion that arises–whether you are baking a batch to share with your children or grandchildren, preparing a “Welcome” gift for new neighbours, or simply looking for something delicious to enjoy on your own with a glass of ice-cold milk and a good book. Whatever the occasion, may I suggest making a double batch of these wonderful cookies–just to make sure there are enough to go around.

Toll House Cookies

1 cup butter or shortening
¾ cup brown sugar
¾ cup white sugar
2 eggs beaten
1 tsp. soda dissolved in 1 tsp. hot water
2 ¼ cups flour
1 tsp. salt
1 tsp. vanilla
½ package semi sweet chocolate chips or semi sweet chocolate, cut up

Directions
Drop onto greased cookie sheet. Bake in moderate oven until lightly browned.
