My Mother’s Kitchen: Date Squares Recipe


My recipe today is for Date Squares—not ordinary date squares, mind you—but delicious date squares with just a touch of lemon juice that makes them tangy and sweet at the same time. Mom’s date squares were another of my favourite recipes—this from a woman who doesn’t care for dates in any other way—dates eaten whole, date cookies, date turnovers, date bread, date anything…but eating one of these squares always led to eating another and another and yet another….not good for the waistline, but great for satisfying the soul.  

 I haven’t made these date squares for quite awhile, but can still taste the tangy, lemony taste when I bit into them, and the sweetness of the dates, brown sugar and oats.   There may be a better Date Square recipe out there somewhere, but I certainly doubt it.

 Date Squares 

12 oz. dates (chopped)
¼ cup water
½ cup sugar
Dash of salt
Juice of 1 lemon

Base and Topping
1 ½ cups rolled oats
1 ½ cups sifted flour
1 cup brown sugar
¾ cup butter
½ tsp. soda
Dash of salt

Directions
Cook dates with water until tender, approximately 5 minutes. Add sugar, salt and lemon juice. Mix oatmeal, flour, sugar, butter, soda and salt until mixture resembles crumbs. Place 2/3 of mixture in pan. Cover with dates and sprinkle rest of crumbs over the top. Cook 25-30 minutes in 400° F oven.
