My Mother’s Kitchen: Peanut Butter Squares Recipe


I loved mom’s peanut butter squares: these squares travelled to wedding and baby showers, to church suppers and school bake sales, to picnics and cottages and funeral receptions. The peanut butter-and-cocoanut combination made them smooth, creamy and chewy at the same time. I made these many times for my children when they were growing up, and they also loved them.

 I have a few vacation days later this week—maybe I’ll make them again. Enjoy.

 Peanut Butter Squares

½ cup peanut butter
1 cup white sugar
1/3 cup butter
1 tsp. vanilla
¼ tsp. salt
2 eggs
1 cup flour
½ cup cocoanut

Directions
Cream peanut butter, butter and sugar. Add vanilla, salt and beaten eggs. Mix in flour and cocoanut. Bake in greased square pan 25-30 minutes at 350° F oven.

Ice with:
3-4 Tbsp. peanut butter
2-3 Tbsp. boiling water
1 ½ cups or more of icing sugar
